Up to one month ahead:  Make the chocolate chip cookie dough, then divide into balls about 2 inches in diameter. Freeze on a sheet pan covered with parchment paper; when frozen, put in a re-sealable plastic freezer bag.

Up to one week ahead:  Make applesauce and refrigerate until ready to use.  If you would rather serve it at room temperature, remove from the refrigerator about an hour before serving (so, pretty much when the game starts.)

Up to 2 days ahead:  Make the prosciutto-gruyère pinwheels and refrigerate.

The day before the party:  Purchase the shrimp and cocktail sauce.  Make the Swedish meatballs and sauce and refrigerate.  Set the table, and set out all the serving pieces and utensils.

The day of the party:  Give yourself 4 hours to get everything ready.  To start, toast the pine nuts, make the zucchini ribbons and the salad dressing, and refrigerate both.  Prepare the scallops, place on broiler pan, cover with plastic wrap, and refrigerate.  Assemble the shrimp cocktails and place in the refrigerator until ready to serve.  Make the potato latkes and fry them, then hold them at room temperature until ready to bake them in the oven.

About one hour before serving, prepare the pinwheels for baking and bake them.  Turn the oven to broil, and broil the scallops.  Put out the scallops, the pinwheels and the shrimp cocktails.  Just before half-time, reheat the sauce for the meatballs, add the cream and the meatballs, and continue with the recipe.  Assemble the salad, bake the latkes, and serve.

Now relax, and enjoy the second half!  Oh, and put the frozen cookies in the oven at the beginning of the fourth quarter.
