Buttered Beets

Ingredients:

6-8 medium beets, preferably half red and half golden
olive oil
4 Tbs. (½ stick) unsalted butter
1 tsp. fresh parsley, minced
pinch good sea salt
a few grindings freshly ground black pepper
balsamic vinegar

Directions:

Preheat the oven to 375°F.

Remove the beet greens, scrub them, and coat them lightly with oil.  Wrap the beets in tin foil, put on a baking sheet, and roast them until tender—depending on the size of the beets, this will take 45 minutes to one hour and 15 minutes.  When the beets are cool enough to handle, peel them and cut them into ¼-inch slices.

Melt the butter in a saucepan over medium heat, add the parsley, salt, pepper, and the sliced beets.  Stir gently to coat the beets and sauté for 5-10 minutes.  Sprinkle with a little balsamic vinegar and serve.
