Buttered Carrots with Chives

Ingredients:

3 Tbs. unsalted butter
2 lbs. carrots, peeled and cut on the diagonal into ¼-inch slices
½ tsp. salt, plus more to taste
¼ tsp. freshly ground black pepper, plus more to taste if necessary
2 Tbs. finely chopped chives

Directions:

Melt the butter in a large skillet over medium heat.  Add the carrots and ½ tsp. salt and cook, covered, for about 5 minutes or until you see steam coming from the pan.  Reduce the heat to low and continue to cook, covered and stirring occasionally, until the carrots are just tender, about 15 more minutes.

Remove the cover, add ¼ tsp. pepper and cook until the liquid has evaporated and the butter begins to brown, about 5 minutes.  Add additional salt and pepper if necessary, sprinkle with the chives and serve immediately.
