Grilled Strawberries with Ice Cream

Ingredients:

¼ cup balsamic vinegar
1 pint strawberries
1 cup dark brown sugar
4 sprigs rosemary
1 carton of your favorite vanilla ice cream

Directions:

Rinse and hull the strawberries, then place them whole in a large bowl. Add the balsamic vinegar, gently stir to coat, and allow strawberries to sit for 15 minutes. 

Pour the brown sugar into a shallow bowl. Dredge strawberries through the sugar. Each should have a thick coat. Place about 5 berries on each skewer,  then re-dredge to ensure berries are coated. 

Place strawberries in the refrigerator and allow them to sit for at least 15 full minutes. This is a very important step as it ensures the sugar and vinegar blends so the coating stays on while grilling.

Grill for about two minutes on each side. 

Rub each ice cream bowl with rosemary sprigs, add the ice cream, then top with strawberries! 

 

Notes:

Soak the skewers in water for at least 30 minutes before grilling.
