Ham and Brie Baguettes

Ingredients:

3 Tbs. dijon mustard
2 Tbs. mayonnaise
1 baguette
8 oz. thinly sliced ham
4 oz. Brie, cut into ¼-inch thick slices
4 cups (about 2 oz.) loosely packed arugula

Directions:

In a small bowl, combine the mustard and mayonnaise.

Trim the ends off the baguette.  Cut it crosswise into 4 sections, then split each section horizontally so it will open like a book.  Spread the dressing on the top half; place the ham, cheese, and arugula, divided evenly, on the bottom half of each section.  Press the bread tops down slightly, cut into thirds, and serve.

Notes:

The dressing can be made up to 3 days ahead.  Store it covered in the refrigerator.

The sandwiches can be made up to 4 hours ahead.  Cover them and store them in the refrigerator (although a nice crusty baguette will suffer a bit.)

Drink with:

An unoaked chardonnay, such as a Meursault.
