Microwave Nutty-Caramel Corn

Ingredients:

1 cup packed golden brown sugar
¼ cup light corn syrup
½ tsp. salt
4 Tbs. unsalted butter
1 tsp. vanilla extract
½ tsp. baking soda
8 cups popped unflavored popcorn
2 cups roasted unsalted peanuts or almonds

Directions:

Pop your popcorn!

Combine the sugar, corn syrup, salt, butter and vanilla in a large glass measuring cup or dish. Microwave on high for 1 minute. Stir. Cook for 2 additional minutes. Add baking soda and stir. Expect the mixture to foam/change color. 

In a large brown paper bag or a large microwavable bowl, combine the popcorn and nuts. Pour the syrup into the bag/bowl and stir to coat the popcorn mixture. Fold to seal the bag, or loosely cover the bowl and microwave on high for an additional minute. 

Put the caramel corn mixture onto a baking sheet lined with waxed paper. Cool, then store in an air tight container until ready to serve.
