Soft Chicken

Ingredients:

1 cup flour
1 egg, lightly beaten
1 cup fresh bread crumbs
½ cup freshly grated Parmesan cheese
4 skinless, boneless chicken breast halves, trimmed
4 Tbs. unsalted butter
2 Tbs. vegetable oil

Directions:

Place the flour in a shallow bowl. In a second shallow bowl, mix the egg with 2 tablespoons of water. Mix the breadcrumbs and Parmesan cheese together in a third. Dredge a chicken breast in the flour, sprinkle with salt and pepper to taste, dip them in the egg mixture and then in the breadcrumb mixture. Press the breadcrumbs so they adhere.

In a large skillet, heat the butter and the oil over medium-high heat. When the butter foams, add the chicken and cook, turning over once, until the chicken is cooked through (about 5 minutes per side). Serve immediately.

Notes:

Lindsay always requested Tomato Sauce with Onion and Butter with this chicken on her birthday.

You may want to pound the chicken a bit if it is thick, in order to make sure that the chicken will be fully cooked through when it is nicely browned on both sides.
