1 1/2 cups flour
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1 1/2 teaspoons cinnamon
2 eggs
1/2 cups vegetable oil
1 cup sugar
1 1/2 teaspoons vanilla
1 small zucchini
spooky eyes
cream cheese frosting, store bought, or see below


Preheat your oven to 350 degrees. Line your muffin tin with cup cake liners. If you don't have any cupcake liners, butter the tins. 

In a large bowl, stir together the flour, baking powder, baking soda, salt and cinnamon.

In a separate bowl, whisk the eggs. Add the sugar, oil, and vanilla to the eggs. Use a grater to coarse grate the zuchinni and add it to the egg mixture. Pour the egg mixture over the flour mizture and stir until the flour disappears. 

Spoon the batter into the muffin cups. Fill each cup about 2/3rds full. 

Bake for 18-25 minutes, until a toothpick can pierce the center of a cake and come out clean. Put the cupcakes out to cool. 

Spread creamcheese frosting across the cupcakes with a butter knife. Add the eyes. 


You'll need to get some creepy eyes for the mummies. Many grocery stores will cary them in October, but Amazon carries Wilton candy eyes year round. 

You can make your own cream cheese frosting by mixing an 8 oz package of softened cream cheese with 1/4 cup softened butter. Add 2cups of confectioners' sugar using an electric mixer. Stir in 1 teaspoon of vanilla extract.
